Meet the Head Chef – Marco Bonanni

Marco’s passion for food came from his Italian Nonna, spending many hours watching and helping her make homemade pasta dishes, which ignited a lifelong love affair of food and creativity.

After completing his apprenticeship, Marco perfected his culinary skills in venues such as Courtney’s Brasserie, Bar Roma, Park Royal and the Menzies Hotel where he was promoted to Sous Chef.

Marco was then offered a chance to run a restaurant in the Golden Mile and Harbour View Hotels in Hong Kong – an incredible and life changing experience.
Marco accepted the role of Executive Chef at Banjo Paterson Cottage in 2003 and continues to create sumptuous seasonal dishes whilst experimenting with food pairings and presentation.
